If you love something, make it flat—that’s how the saying goes, right? When it comes to flat croissants, at least, that’s definitely the case. We all know (and love) the classic flaky croissant, but bakeries and home chefs have taken the pastry to new heights (or lows?) by flattening it and frying it to make it even crispier.

For years I’ve heard the same refrain: You can’t have a good-looking garden that is also eco-friendly. It seems that many folks think native plants are too wild looking and that taking a lighter approach to garden cleanup or care will lead to a messy, unkempt landscape. I argue that there are small steps everyone can take to encourage greater biodiversity in their space, all while keeping it attractive.

In 2008, Jessica Eikleberry was 29 years old and had just read Michael Pollan’s Omnivore’s Dilemma. She wanted to start eating locally and, with the help of her mom, she made a goal for the coming Thanksgiving: an all-local meal.

As a researcher of urban agriculture, I was shocked to see a recent news article bearing the headline “Food from urban agriculture has a carbon footprint six times larger than conventional produce, study shows.” I had spent five years researching and publishing peer-reviewed articles and book chapters about urban agriculture during my Ph.D. with the Berkeley Food Institute, and this conclusion seemed to fly in the face of all that I’d read. How could this be?

There’s a reason Marry Me Chicken is so popular: It’s simple, delicious, and pretty easy to make. It earned its name after an editor at Delish, Lindsay Funston, made a recipe video for a Tuscan-style chicken dish in 2016. The video’s producer took a bite and said, “I’d marry you for that chicken!” It went viral on TikTok, and it seemed like everyone looking for an engagement—or just a really good chicken dish—had to try it out.

Despite working predominantly in ornamental—especially naturalistic—horticulture, I hold an “interdisciplinary minor in organic agriculture” from Colorado State University. Early in my career I worked primarily in food crops, and before I was 20 years old I spent summers in bean-breeding fields, diversified food-cropping systems, and home gardens. Through my years of food gardening, I’ve found that growing tomatoes even at 5,000 feet here on the “Front Range” is a gamble. With frequent cool, wet summers or late spring frosts—or worse, early killing frosts in fall—ours is not a favorable region in which to grow classic, meaty tomatoes.

At the end of February, the town board of Lind, Wisconsin voted against changing the zoning laws to allow a nearby 600-cow dairy to install an anaerobic digester. These digesters are becoming more common, particularly at larger dairy operations housing thousands of cows, called concentrated animal feeding operations (CAFOs). This is partially because they have been included as a key ingredient in the Biden administration’s pledge to reduce methane emissions in animal agriculture.

Well-stocked bird feeders help to supplement birds’ food when it’s in short supply. Throughout the winter months, high-fat foods and water are in short supply but even through the spring and summer, a bird feeder will help to increase the number of birds you’ll see and help them raise their chicks successfully. Plus, ifyou’re regularly topping up your bird feeder, the same birds will continue to return as they learn your garden is a good source of food. Specialist bird cakes, seeds and food like mealworms and flaked maize are all good options and supplying a variety of foods is a good way of attracting a wider range of bird species to your garden.
