Try these delicious flavoursome summer cocktail recipes to recreate Chelsea at home. We’ve even got the kids covered with a homemade elderflower cordial recipe just perfect for this time of year.

“This is a new recipe that I have been trying out as a light summer drink. The flavours of apple and elderflower go famously well together, and the addition of cucumber gives the drink an extra burst of freshness, perfect for long summer days.”
Serves 2
1. Pour the gin, apple juice and elderflower cordial into a cocktail shaker with some ice and muddle. Don’t be too rough – you only need to combine.
2. Add the sliced cucumber and apple to two long cocktail glasses and pour over the gin mix.
3. Top with a lavender stalk or two, recline on the sun lounger and enjoy!

1. For the syrup, simmer sugar in an equal weight of water, stirring to dissolve. Add a few sprigs of ginger rosemary and remove the pan from the heat.
2. Taste as the syrup cools, removing the rosemary when it is the strength you like.
Notes: If you don’t have ginger rosemary, use regular and add a little of the syrup from a jar of crystallized stem ginger. The syrup will keep for a few weeks in the fridge.
