The concept of growing vegetables from leaves is a sustainable approach as it utilizes parts of the plant that people typically discard.
These greens grow from leaf bases or stalks – stems that connect the leaf blade to the main stem of the plant.
Lettuce leaves can sometimes be regrown by placing the base (the part where the leaves meet) in a shallow water dish. New leaves will sprout from the center.
Celery can regrow from the base or the leafy tops. Place the base in a container with water or soil, and it may produce new stalks. You can root the leafy tops similarly.
