If you ask people what plant they would take into space (which I do, quite a bit), a significant number of them answer potatoes, because they can’t imagine a life without French fries (chips, if you’re British). The only problem with that is that, so far, no one has worked out how to make fries in space. The International Space Station doesn’t have a deep fat fryer, and you can imagine the health & safety nightmare that would be in microgravity. In The Martian, Mark Watney has to make do with a microwave, and rues the day he runs out of ketchup.
This is obviously a big problem. Very few people will want to go to Mars (or at least, to go for long) if the food is dreadful. Fortunately, there are people working on it. ESA has been supporting research into frying methods in microgravity.
For something we do every day, frying potatoes involves remarkably complex physics and chemistry. And microgravity makes everything we take for granted that much more difficult.
You need gravity for bubbles to rise, for example, so in microgravity they might stick to the surface of the potato, swathing it in a layer of steam that would prevent it from cooking properly and becoming delicious.
So researchers developed a special carousel-type rig designed for safe frying experiments in weightlessness. And they bolted it to the floor of ESA’s zero-g plane during two parabolic flights. That’s when the plane flies in a series of arcs to create short periods of weightlessness (because you’re basically falling out of the sky). Anecdotally, it’s called the Vomit Comet, for good reason.
