Fantasy Space Plants

Now that I have a couple of episodes under my belt, I am poised to have guests on my Gardeners of the Galaxy podcast. I thought it would be fun to ask each of them the same question:
“If you were joining a settlement on the Moon or Mars, which plant would you take with you, and why?”
I’m interested to hear which species people choose and their reasoning. Will the constraints of spaceflight limit their choice, or will they go full-on Fantasy Space Plant and select something completely impractical and entirely wonderful?
Will there be markedly different choices from people with different cultural backgrounds? I am reminded that the UAE wants to grow palm trees on Mars.
And then I thought about what my answer to the question would be. Personally, I assume that I am joining the settlement as the resident space botanist, and will be involved with growing food plants on a daily basis. By which I mean that if the settlement doesn’t have a space greenhouse, I’m not going!
So if the fruit and vegetable needs of the settlement are sorted, all I need to worry about is taking along a personal plant. A plant pal. And if you’re going to have one houseplant for the rest of your off-world life, what do you choose? Something unkillable? One that changes on a seasonal basis, to give you something to look forward to? Or an unchanging vegetative companion that serves as your plant anchor in an unfamiliar world?
I think some people will choose for colour, and that’s a good idea since the inside of a space settlement is likely to be bland and sterile. Lots of white and steel, or institutional beige.
